GREEK CHICKEN KEBABS WITH GREEK SALAD & TZATZIKI

We are going through a little bit of a "Greek food phase" at the minute and are obsessing over the fresh combination of garlic and lemon with chicken. As the seasons change and the weather gets warmer, we are always looking for fresh recipes and ideas, and when we want something quickly to cook for dinner we always resort back to lemon and garlic chicken recipes.


Fresh, zesty and light, this is one of our new favourite go-tos. Let me know what you think in the comments below!



FOR THE CHICKEN:

INGREDIENTS:

4 chicken breasts

4 cloves of garlic

1 lemon, the zest and juice

2 tbsp oregano

2 tbsp chilli flakes

4 tbsp Greek yoghurt


METHOD:

  1. Preheat oven to 200C.

  2. Chop the chicken breasts into chunks, and marinate in all the ingredients for half an hour, well coated and mixed.

  3. After the half an hour, add to skewers.

  4. Place on a tin foil lined tray, and add to the oven. Turn the chicken every 10 minutes for half an hour, basting in the left over sauce that it was marinating in.

  5. Once cooked through, serve with the tzatziki, flatbreads and Greek Salad.









FOR THE TZATZIKI

INGREDIENTS:

6 tbsp yoghurt

1/2 cucumber, grated

2 cloves of garlic, crushed,

2 tbsp cumin

Salt and Pepper for seasoning


METHOD:

  1. In a bowl, mix together all the ingredients and set to one side.

  2. Add salt and pepper to season to taste.


FOR THE GREEK SALAD:

INGREDIENTS:

100g of black olives

50g of tomatoes, halved

Half a cucumber, chopped into quarters

1 red onion, finely sliced

1 lemon

80g Feta cheese


METHOD:

  1. Add the cucumber, tomatoes, onion and olives to a bowl and mix.

  2. Squeeze the juice of a lemon into the salad and mix.

  3. Crumble over the feta and mix again, gently. Drizzle over some garlic oil too if you have some!
