| BEETROOT, GOATS CHEESE & WALNUT TOWERS | 🥜 🧀

The combination of beetroot and cheese is my absolute favourite, particularly when it comes to the summer months. Perfect for a fancy starter, or even broken down into a salad, you won't want to miss this!





SERVES 2


INGREDIENTS:

2 pickled beetroots

Creamy spreadable goats cheese

A handful of walnuts

A handful of rocket

Balsamic glaze

Cocktail sticks


METHOD:

1. Slice the beetroot into thick slices. You should be able to get three or four slices.

2. In a bowl, place the goats cheese and mass down until softened and is in w creamy like texture.

3. One by one, spread the goats cheese over the slices of beetroot to form the tower. Repeat. You can use a cocktail stick through the centre to hold in place.

4. Place your towers in the fridge for half an hour to set.

5. In the meantime, add rocket and walnuts to your plate. After 30 mins, put the tower in the centre of the bed of salad leaves and nuts.

6. Squeeze a couple of dots of balsamic glaze, and with the back of a teaspoon, spread.

7. Serve chilled.
