Mediterranean food brings our house so much joy. It is so refreshing and light and with just a simple combination of ingredients, can exude so much flavour. Below is a quick and easy vegetarian recipe that I live for in the week for my lunch breaks. Want to add meat? We reckon grilled chicken or salmon would accompany this dish beautifully.

SERVES 2 (can be used as a side pasta salad too!)
INGREDIENTS:
400g dried pasta
100g black olives
100g cherry tomatoes
50g capers
50g feta
4 tbsp green pesto
2 tbsp oregano
4 garlic cloves
1 lemon
METHOD:
1. Boil your pasta to an al dente texture.
2. In a pan, place your tomatoes, spinach, garlic and capers and cook through until hot.
3. Once your pasta has cooked, drain and add to pan with vegetables. Add pesto, oregano and the zest and juice of one lemon.
4. Mix thoroughly until completed coated.
5. Serve with a sprinkling of feta and season with salt and pepper.
