Butternut squash is a staple vegetable in our house. Whether it's in a soup, stuffed on its own or included in a mashed potato blend, it is delicious and has so much flavour and nutritional value. Here we have included it with chicken and chorizo (two of my favourite ingredients) in a winter vegetable tray bake to warm you up whilst the storm is coming in.
SERVES 2
INGREDIENTS:
4-6 skin on chicken thighs
1/3 chorizo loop
1 bell pepper
2 carrots
1/4 butternut squash
2 courgettes
1/2 onion
4 cloves of garlic
200g tomatoes
200g spinach
4tbsp paprika
3tbsp oregano
Salt and Pepper
METHOD:
1. Preheat oven to 200C
2. Chop all your veg, (but leave your cherry tomatoes whole!) and put in the tray.
3. Place your chicken thighs on the top of the bed of vegetables. Add your chopped chorizo chunks on the top.
4. Sprinkle over the paprika, oregano and salt and pepper.
5. Drizzle over olive oil and toss the ingredients together.
6. Place in the oven and cook for one hour. Serve hot with crunchy croutons!
