Gooey, Dark Chocolate Brownies

Sweet things in our house are not common, purely on the basis that we have more of a savoury tooth! However, on a Sunday afternoon there is nothing better than the smell of freshly baked brownies wafting through the house.

Ingredients:


100g of Butter chopped

200g of Dark chocolate chopped

4 x Eggs

250g Golden caster sugar

100g Plain flour

1tsp Baking powder

30g Cocoa


Method:

  1. Heat the oven to 180 degrees Celsius

  2. Grease a 22cm square brownie tin with butter.

  3. Melt the butter and chopped dark chocolate together in a microwave or in a bowl set over a pan of simmering water. Set aside and cool to room temperature.

  4. Whisk the eggs and sugar together until the mixture is light and fluffy. You want to be able to see little bubbles forming when you stop whisking.

  5. Fold the chocolate mixture into the egg mixture and sift on the flour, baking powder and cocoa. Fold this in to give a fudgy batter.

  6. Bake for 25-30 minutes or until the top is cracked but the middle just set. Cool completely, then lift out of the tin and cut.
